Raw dried pineapple

Normally I wait until winter when we can put pineapple on the top of the heater. It’s an easy and cheap solution without using more energy. After 3 days, the pineapple is dried perfect. Raw food is when you use less than 48 degrees to dry fruit and this is raw food method. It remains all vitamin and minerals from the fruits.

This time I used oven at 50 degrees and ran for 12-15 hours to get this result. My husband was screaming for the energy consumption.

17 Sep: we got 13kg of grapes and 7,8kg juice. They are extremely sour but let’s see how the result will come out 😉
The first time 9kg of grapes gave 6kg juice

18 Sep: I wash the grapes and crush them by hands

The crushed grapes are put for fermentation. I stir them 2-3 times per day.

21 Sep - The first test was around 12% of the sweet grapes

19 Nov - The 2nd test was 18% of the sweet grapes. The taste was still young but very much like porto wine. My husband approved it with a nice surprise. He didn’t expect I could make it 😉

Last time we went to a sushi restaurant, Josephine said “mom, it doesn’t taste as good as our sushi” and we agree to make homemade sushi in stead of going to the restaurant. So here is results for our Saturday lunch 😋😍

Chicken dishes

We always buy our groceries at Netto and  Spar Kornblomstvej where they have a lot of good vegetables and fruit deals. Here is what I cooked this week:
2 psc of 1,2kg chickens: 50kr,
2 packs of mushrooms: 10kr
1 pack of snack pepper fruit: 10kr
Coconut milk: 9kr
Galanga, citron grass, citron leaves: frozen at home.
Rice, pasta and ingredients: at home
04 chicken filet for kids to make breaded chicken, wings and drumsticks for grill, thigh meat for thai soup. Around 90kr for 2 dinners for 4 and lunch packs for kids - 10kr/portion. It’s really cheap to cook from raw materials in Denmark 😎

Low carb soup

A very simple and delicious soup 😍 I use the shrimp shells to cook the broth, then add meat balls, vegetables, shrimps and some drops of sesame oil. Taste and smell wonderful   👌❤

Wild pulled pork burger

Wild pulled pork burger: 10 hours at 110 degree, it smells so good and it tastes good too, especially with my dressing, a mixture of fried citron grass and garlic, chilly powder (sa tế), ketchup and mayonnaise. The best in town and the only! 😘😂👌
Bánh mỳ kẹp thịt lợn rừng bỏ lò nguyên đêm ăn với sốt cà chua và mayonaise trộn sa tế 😋

I was drying some squid in the oven. Jørgen came home from work and said to Lucas ''Lucas, come here and see. Your mother caught some aliens and she hangs them to dry'' 😂🤣😂

Squid ink noodles

I make it the first time in my life! 😘
I bought 5kg fresh squid and use all the ink to make pasta. It should be 4 egg, 400gr flour with such amount of ink and bigger noodle size. The dish tastes really good with squid filet, fresh tomatoes, garlic and saffron but I have to practice more to get as good as the taste in Rome

Our kitchen garden

We have potatoes, peas, salad, coriander, mint, strawberries, carrot, beetroot, green bean. It is really a luxury feeling to go out to the garden and get some fresh vegetables for dinner. How we love it 😍❤😊
